The temperature of the mold itself is not quite the same as that of the plastic mold, which is generally below room temperature, so the temperature of chocolate at work is also different. At present, polycarbonate is still the mainstream of chocolate molds used by everyone, because its finished products have good glossiness and are easy to clean and protect.

Should I clean the chocolate mold or shouldn't I? Is it wiping (Polish)?

If you use the mold every day, there is no need to clean it. If the chocolate with high temperature is taken out of the mold, there is still a very thin layer of cocoa butter in the mold, so it is not necessary to wipe it. When wiping it, the thin layer of cocoa butter will be broken, and the demoulding effect will not be good. If the mold is really dirty, or you need to inject dark chocolate into the mold that has been injected with white chocolate before, you must clean it before use.

After washing the mold, do you want to clean it with cotton balls or something very soft?

Clean the mold with hot water and soap, and blow it dry with compressed air after cleaning. If you wipe it with cotton balls or other soft objects, it will cause slight wear and tear on the mold and make the surface of the mold uneven. Yes, from the production point of view, cleaning a large number of molds is a very unnecessary expense. Another question is, if there is no thin layer of cocoa butter in the mold after we clean it, how can we make it reappear?

After you get the newly bought chocolate mold and use it to make a bonbon mold, there will be a thin layer of cocoa butter on the surface of the mold. The ideal chocolate temperature is to keep the mold bright, which is a problem that needs more attention. It is also feasible to spray cocoa butter into the mold to make the mold brighter.

Will the mold be clean without cleaning it?

To keep the production environment clean, there should be no large area of dust and no water, especially water, which is an important factor for bacterial reproduction. Chocolate must be kept away from water. After using the molds, they should be placed crosswise with the opening facing down and the bottom facing up to ensure that no dust falls on the molds.

Look at this chocolate in my hand. The mold for making it doesn't need to be wiped with alcohol, but only cleaned with normal hot water and dried with compressed air. The finished product is still bright.

That is to say, alcohol can be understood as a good solvent, which can help remove the foreign matter stuck in the mold. While removing alcohol, it may be easier to scratch the mold. When I spray with colored cocoa butter, I will wipe the mold with alcohol, but generally, or in daily production, I will not wipe the mold with alcohol.

When cleaning the mold, what material can we use to erase the mold? Toilet paper? Cotton ball cotton? Sponge? Or something else? Or not at all?

Rinse and dry with ordinary hot water. Wipe will damage the mold. Sometimes the workers in the chocolate factory will say, Chef, you need to update your formula, and chocolate is slowly sticking to the mold. In fact, this is because you wipe the mold too frequently and there is no formula problem.

First, use hot water at a temperature that can melt the grease and take away the dirt on the surface. Then wipe it with something very, very soft. Don't be like a sponge. It will damage your mold. Purge with compressed air until the air on the surface is dried.

Soap is fine every day, and so is the kind used to wash dishes. PVC is a relatively stable material, and it can remain unchanged at 90℃.

Yes, of course, but your dishwasher can't be mixed. The things used to wash barbecues are used to clean molds, so it won't work. To ensure the cleanliness of the dishwasher, chocolate factories have detergents specially designed for chocolate molds, which are of course expensive.

Can the dishwasher shorten the life of our chocolate molds?

No problem, there is no problem at all when using the correct method.

How to use the baking chocolate mould correctly.

If you use a small number of molds and have a round shape, you can use a very soft paper towel to absorb the water in the molds. If there are a large number of molds, they can be dried with compressed air for about 20~30 seconds.

When using the compressor, the oil filter and water filter device must be installed, because when the machine works, it will produce oil droplets and water droplets, which will be sprayed out together with the compressed air. If there is no filter part, it will have a negative effect, and more oil and water droplets will stick to the mold.

Can you clean the mold separately with a hot air gun? Can you damage the mold?

The temperature of hot air gun is very high, and it is easy to exceed 90℃. Blowing the mold for a long time will easily deform the mold. When cleaning the back of the mold, it can be wiped with a little heat, but I don't recommend using it inside the mold, because it will make dirty things stick more firmly and make it harder to clean. If the mold temperature is low, use a hot air gun to blow out the inside of the mold slightly, then spray the color with chocolate, and then use a casting mold. This is a good way to make BonBon, which can get a thinner shell and better brightness.

How to clean the dirty mold? Which method is better?

That's a good question. For example, to make a rabbit chocolate stuck on the mold, don't scrape it off, or wash it directly, but blow it off with a hot air gun, then dip it in with a brush to raise the temperature of chocolate, apply the melted part on it, and then put it on it after it crystallizes. This is very effective. If the mold is covered with dirt, my suggestion is to wash it with a dishwasher.
